Eclairs with Plum Filling

INGREDIENTS:

FOR THE PLUM FILLING:

1 ½ Cup Plums, dried, pitted

3 Oz Butter, unsalted, softened

5 Oz Farmer Cheese

1 Cup Sugar, coconut or white, cane, powdered

1 teaspoon Vanilla, extract, pure

FOR THE PUFF PASTRY:

1 ½ Cups Flour, unbleached, all purpose

½ Cup Butter, unsalted

4 Eggs, whole

½ teaspoon Salt, sea, fine

FOR THE CHOCOLATE GLAZE:

1 Cup Chocolate, dark, bakers

½ Cups Sugar, white, cane, powdered

½ Cup Heavy Whipping Cream
